Filet Mignon stuffed with Spinach and Gorgonzola

Serves One

8 oz Filet Mignon
1 Cup of Fresh Baby Spinach
1 Tablespoon Crumbled Gorgonzola
Salt and Pepper to Taste

1.  With a sharp knife, cut a cross into the top, centre of the filet mignon about 1 inch deep.
2.  Sauté spinach with 1 teaspoon of butter until wilted.  Season with salt and pepper to taste.
3.  Add crumbled gorgonzola to spinach mixture and stir until melted.
4.  Stuff cooked spinach and gorgonzola into the top of the filet mignon and sear in a very hot pan until crust forms.  About two minutes on each side.
5.  Place filet mignon in 400°F oven and spoon remaining spinach and gorgonzola on top.
    15 – 20 minutes for medium-rare
    25 minutes for medium
    30 minutes for well done
Serve with croquet potatoes and fresh vegetables.
