Cowboy Steak with Mexican Black Bean Tortilla Wrap, Sour Cream, Roasted Roma Tomatoes and Gravy.

Cowboy steak
1 tbsp Sour Cream (USD Dairy)
2 oz grated Cheddar Cheese (USD Dairy)
16 oz Prime Rib Beef bone in
Pinch of salt and black pepper
Place on the grill
Mexican Bean Sauce
4 large Onions diced
1 Red Bell Pepper dice
1 Serrano Chili sliced
1/2 cup Garlic minces
½ cup Ancho puree
2 qt Water
3 qt black beans cooked
2 oz Chocolate
1  tbsp Chili Powder
1 tbsp Paprika
1 tbsp Oregano
1 tbsp Cumin
3 Bay leaves
1 tbsp Sour Cream
Salt and Pepper to taste

Sauté the onions, bell peppers chili and garlic.
Add the dry herbs
Add water, chocolate and the remaining ingredient except the black beans and simmer for 15 minutes
Puree the ingredients, pour back in the pot and add the black beans and simmer for another 15 minutes.

Warm up the tortilla on the grill for about 5 second, add the Mexican black beans, sprinkle grated USD Cheddar Cheese and top with sour cream.
